An easy Cajun style Gumbo with chicken, shrimp, spicy Andouille sausage, and a classic roux. Excellent as a main dish with rice and your favorite hot sauce.

Roux
 ½ cup Oil
 ½ cup Flour
Ingredients
 1 lb Chicken (pre-cooked and shredded)
 1 lb Shrimp (peeled and without tail)
 1 lb Andouille sausage (cut into .5 inch rounds)
 1 onion
 1 tbsp minced garlic
 0.50 tbsp Tony's seasoning
 0.50 tbsp Nature's seasoning
 2 bay leaves
 Cayenne pepper (add to taste for spice)
 0.50 lb Frozen okra
 7 cups chicken broth

Instructions:

1. Mix oil and flour in pot over medium heat (stirring continuously) until it becomes the
color of a penny.
2. Add onions and garlic. Mix together for one minute.
3. Add your chicken broth.
4. Add boiled, shredded chicken and sausage rounds.
5. Bring to a boil, and let simmer for 10-15 minutes.
6. Add shrimp and okra. Let cook until the shrimp are fully cooked.
7. Serve over rice.

Even though this is a quick and easy recipe, the longer that you can let the gumbo simmer on low heat, the better the taste will be. I serve mine over rice, but you certainly don't have to do the same. You can also choose which meats you would like to add to the gumbo as well. Just make sure that they are all cooked through before you serve. Oh, and if you prefer more heat to your gumbo, add cayenne pepper and hot sauce until your desired level of heat has been reached.
