Why Soup Is the Ultimate Winter Comfort Food
With the early morning temps dipping into 30º and below, my body is finally fully processing the fact that it’s winter. And what do you want when it’s cold outside? Something warm that will fill you up and make you feel cozy, of course.
Combine that with the fact that somehow January—what’s supposed to be a “not so busy” month—is suddenly crammed with one zillion events and schedules are too packed to prep an elaborate meal… What now? Soup, that’s what.
If you’re the type to find yourself rummaging through the pantry, hoping a delicious meal would magically appear… you’re in luck. I love to pair mine with some good crusty bread (the better to dip with!), but grilled cheese is also a stellar option.

While many whip out the squash soups once fall hits, this soup is still perfectly acceptable to eat through the cold months. Butternut squash soup tastes of nutty, buttery sweetness balanced with rich savory notes, and it’s loaded with nutrients (and is low-carb!). Not to mention the chili peppers add just the right kick of heat.… Usually, it smells so good that I will plan to come back for seconds, only to be filled up on bowl one.
