This is a flavorful breakfast bread. It is the right balance of sweet and citrus to brighten up your morning. Fantastic with a big plop of butter.

 2 cups Blueberries
 2 cups Flour (all-purpose)
 1 cup Granulated Sugar
 1.50 tsp Baking Powder
 1 tsp Salt
 1 tsp Vanilla Extract (REAL)
 2 tbsp Vegetable Oil
 0.50 cup Orange or Pineapple Juice
 1 Egg

Preheat oven to 350°.
In a large bowl, combine the flour, sugar, baking powder, and salt.
In a separate bowl blend vegetable oil, vanilla*, egg, and orange juice until combined.
Slowly add wet ingredients into dry.
Stir until fully combined.
Stir in rinsed blueberries** until evenly distributed.
Pour batter into one large greased loaf pan ( I line mine with parchment, but you do you).
Bake at 350 degrees for 55-60 minutes.
* Vanilla Vodka is not a good substitute for Vanilla Extract (learned this the hard way)
** If you lightly dust the blueberries with flour, they don't burst in the oven 🙂
